Working mommy meals

I thought  I would devote today’s post…to OUR HOME….specifically in reference to: what to make for dinner?!  I know as a  working mother of four…it is hard to find time to make dinner…and most importantly….to figure out what to make…sometimes I feel like I am making fried chicken cutlets all of the time…at least I knew the kids would eat it…but so time consuming….messy and a big clean up. 

So I hope the recipe below is something you and your family will enjoy…it is easy to make and full of flavor.


This meal can easily be prepared in the morning before you go to work.  The chicken is shredded and made into sandwiches for the kids….so that actually leaves leftovers if you buy the big package. 

My husband and I love the boneless and skinless chicken thighs...they are so easy to prepare…and I am able to get the entire meal ready before work in the morning.

So at 6:30AM I put the thighs in a long glass Pyrex dish…I melt Smart balance butter….and brush the thighs with the Smart Balance…sprinkle with parmesan cheese…a little black pepper….paprika….and some MAGIC SAUCE:

Be sure to go to the link above for more information about Magic sauce…it adds great flavor to anything you are eating…can be used as a marinade….or a dipping sauce.  We used it when we made Home-made burgers the other night….and the burgers were so juicy…full of flavor…and the best part  is that the Magic Sauce is lower in sodium…even lower than the low sodium soy sauce.

Back to the chicken…I covered with foil and baked on 350 degrees for about an hour and a half….and made brown Texmati Rice while the chicken was cooking.

Tonight the kids will have the chicken shredded on a potato roll with some cheese and whatever condiment they would like…..some Texmati Rice….and a veggie….and black or red beans.  I buy the beans in a can…I was soaking them the night before…the dried beans you buy in a bag….it just does not seem worth it to me….easier to buy the beans in a can…and I do not notice a difference at all.

My husband and I will have the chicken shredded….black beans….over the Texmati Rice and a veggie on the side.

I buy the big package of chicken thighs….because we usually have leftovers…and tomorrow night I can use the chicken to make the chicken burritos recipe….If you need that recipe be sure to click on WHAT TO MAKE FOR DINNER….you can find under the categories page.

And definitely check out the Magic Sauce….it really was delicious…full of flavor…and made our burgers juicy… ketchup needed…that is what they say…..if the burger is a ridiculously good burger…no ketchup is needed.
